Vegetable Tofu Fried Noodles
Ingredients:
100g dried rice noodles
1/2 spring onion
½ onion
60g tofu
sprinkle of pumpkin seeds
drizzle of sriracha sauce
1 tsp coconut oil
1 tsp chili flakes
3 tablespoons soy sauce
2 tsp sea salt
2 tsp Chinese five spice
Preparation time: 5 minutes
Cooking time: 15 minutes
Serves: 2
Method: Bring a pan of water to the boil, add the dried rice noodles and bring to the boil this should take around 10 minutes depending on noodle thickness.
Melt the coconut oil in a frying pan or wok and add the diced onion and the cabbage. Fry the veg lightly.
Next, with your fingers crumble the tofu and add to the vegetables in the frying pan / wok.
When the noodles are cooked through, drain and run under cold water tap. Add the noodles to the tofu and veg in the other pan.
Mix the contents thoroughly whilst adding the Chinese five spice, soy sauce, salt and chilli flakes.
Turn off the heat and dish up.
Finish with slices of fresh spring onion, pumpkin seeds and perhaps a dash of sriracha sauce. Enjoy!
