Vegan Pesto Super Green Salad

Ingredients:
1 handful of spinach leaves
1 handful of rocket leaves
1 tomato
Slice of lemon

For the pesto:
1 handful of baby spinach leaves
1 handful of fresh basil leaves
Pinch of salt
1 garlic clove
Splash of extra virgin olive oil

This quick and easy meal is perfect for when you’re in a rush but fancy something healthy and fresh.

Preparation time: 10 minutes
Cooking time: 0 minutes
Serves: 1/2

Method: For the base of this dish grab a handful of fresh spinach leaves, a handful of fresh rocket leaves, then chop up the tomato.

For the pesto dressing, start off by peeling the garlic clove.

Next, gather a handful fresh spinach leaves along with a handful of fresh basil leaves – straight off the plant is best!

Blend the spinach and basil leaves along with the garlic, a splash of extra virgin olive oil and a pinch of sea salt.

Finish off by drizzling over a squeeze of a fresh lemon and a light sprinkle of linseed – linseed is rich in omega 3!
