Scrambled Tofu on Toast – With A Kick

Ingredients:
1 tsp coconut oil
160g tofu
1 piece whole meal bread
1 tomato
1 handful rocket
1 handful baby spinach leaves
½ tsp chili flakes
1 tablespoon soy sauce
1 tsp dried thyme
1 pitted green olive

Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 2

Method: Firstly, pre-heat the grill oven on a medium heat.

Slice the tomato and place on a heatproof tray under the grill.

Now, melt the coconut oil in a frying pan. Into a bowl crumble the tofu and then add the soy sauce, chili flakes, dried or fresh thyme and stir until the contents are thoroughly mixed.

Now, pour the contents into the frying pan.

As the tofu begin to cook gently stir it across the pan with a wooden spoon to ensure the contents are cooked through. Keep stirring.

Boil you kettle and poor the water through the spinach in a colander to wilt it. Squeeze the water from the spinach.

Next, toast a slice of bread of your choice – I use whole meal.

When toasted, create a bed of wilted spinach on the bread, pile on the scrambled tofu and add the grilled tomato.

Finish with a handful of rocket leaves, a few olives and enjoy!
