Cabbage and Potato One Hot Pot Stew

Ingredients:
1 tbsp olive oil
1 onion
3 potatoes
½ savoy cabbage
1 tsp dried parsley
1 celery stick
2 tbsp red cabbage
½ tsp chilli flakes

1 tsp cumin
1 tsp turmeric
1 tsp curry powder
½ tsp black pepper
½ tsp sea salt
1 tsp dried thyme
1 vegetable stock cube
3 garlic cloves
500ml boiled water

This comforting hearty curried vegetable stew is perfect to warm you up after a long cold day and if there is any left over you can freeze it for another time.

Preparation time: 10 minutes
Cooking time: 50 minutes
Serves: 4

Method: Start by heating the oil in a large soup pot on a medium heat.

Dice the onion, add to the pan and sauté until translucent.

Next, chop the celery stick and dice the garlic cloves – add these to the onions in the pan.

Now to add he warming spices. Into the pan mix in 1 teaspoon of curry powder, 1 teaspoon of cumin and 1 teaspoon of turmeric.

Boil your kettle and poor 500ml of boiled water into the pan, add a vegetable stock cube and mix with a fork until fully dissolved.

Next, chop up the potatoes into bite-size cubes and the cabbage into strips. Add the chopped potatoes and cabbage into the pan.

Add 1 teaspoon of dried or fresh thyme (I used dried as it is what I had in my cupboard), half a teaspoon of chilli flakes, half a teaspoon of salt and half a teaspoon of freshly-ground black pepper.

Stir thoroughly and leave to cook on a medium heat for around 30-40 minutes.

Let the contents simmer for around 10 minutes.

Dish up and finish with a dollop of red cabbage and a sprinkle of parsley. Enjoy!
