Avocado, Pesto and Tomato On Toast

Ingredients:
½ ripe avocado
1 tomato
1 handful of rocket
2 piece wholemeal bread
1 garlic clove
Splash of olive oil
Handful of basil leaves
Handful of spinach leaves
Pinch of sea salt
Sprinkle of pumpkin seeds
2 tsp flax seed

Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 2

Method:

Start off by heating the grill oven and slicing the tomato. When pre-heated place the tomato under the grill.

For the pesto, start off by peeling the garlic clove. Next, gather a handful fresh spinach leaves along with a handful of of fresh basil leaves and blend along with the garlic, a splash of extra virgin olive oil and a pinch of sea salt.

Now, place the bread under the grill, when toasted on one side turn and toast the other. When cooked remove the toast and tomatoes from the grill and place on a plate.

Next, spread the pesto generously onto the toast, chop the avocado into slices and add onto the bed of pesto. Place a handful of rocket leaves on top of the toast. Finish with the flax and pumpkin seeds.
